Sesbania galactomannan is a storage polysaccharide found in the endosperm of sesbania seeds, comprising a linear backbone of (1→4)-linked β-D-mannopyranose units with single-unit α-D-galactopyranose branches attached at the O-6 position. The mannose-to-galactose ratio is approximately 2:1.

This branching pattern gives sesbania galactomannan distinctive properties: excellent cold-water solubility (unlike less-substituted galactomannans like locust bean gum), synergistic interactions with κ-carrageenan and xanthan gum, and the ability to form cross-linked gels with borate ions. The molecular weight ranges from 200,000-500,000 daltons.
