The viscosity of sesbania gum solutions depends on concentration, temperature, pH, and the presence of cross-linking agents. At 1% concentration in distilled water, fully hydrated sesbania gum develops viscosity of 2,000-5,000 cps (Brookfield RVT, 20 rpm, 25°C). Viscosity increases synergistically when sesbania gum is combined with xanthan gum or carrageenan.
